Nat Cool, naturally “fresh and lively,” is an innovative concept created by Niepoort, a movement uniting various producers with the aim of crafting light and easy-to-drink wines. We created a wine reminiscent of the “cloudy” wines of old, which were bottled very early while still containing some residual sugar and fine lees, to undergo a second fermentation in the bottle and produce carbon dioxide.
