La casta Encruzado è esclusiva della regione del Dão, è abbastanza equilibrata, aromatica e conferisce ai vini una grande longevità. Le piante crescono su pendii situati tra i 350 e i 400 metri di altitudine. La vigna è condotta all'interno di un programma di protezione integrata, essendo vietata l'applicazione di erbicidi. Il controllo delle infestanti è effettuato con mobilizzazione del suolo. La vendemmia è manuale, quando queste raggiungono il punto ottimale di maturazione, situandosi nella 2ª quindicina di settembre. Questo vino di prima produzione è stato vinificato in inox a 13ºC, avendo due terzi di esso terminato la fermentazione in botti nuove di rovere francese, dove ha affinato per 12 mesi. Produzione: 1.300 bottiglie.
