The old vines at Quinta Vale D. Maria are divided into different plots and each plot is harvested by hand. The grapes are selected before entering the cellar. They are de-stemmed and trodden in mills 3 days before fermentation which takes place in the mill and/or in stainless steel vats. In the wine press, the wines are trodden by foot every night, in stainless steel vats, and pumped over manually. The wines are removed cleanly into new 225-liter French oak barrels, from various cooperages (Seguin Moreau, François Fréres, Taransaud, Nadalie and Berthomieu), where malolactic fermentation takes place. All wines then age for 21 months in French oak barrels (70% new barrels and 30% one year old barrels), with the different batches obtained from each fermentation being kept completely separate until the composition of the final batch, approximately one month. before bottling.
It is concentrated, with an elegant structure and a vigor that intensifies the juicy texture of this wine. It is balanced, with a feeling of freshness amidst a harmonious blend, making this wine extremely elegant.
