The Moscatel Favaios 10 Years is a blended wine made using only the finest harvests of Moscatel. In years when nature allows conditions for the Moscatel grape to express itself in all its splendor, some fermentations are carried out with a careful selection of the grapes. The fermentation lasts about three days with intense skin contact and temperature controlled at 15-16°C. The grape spirit is then added to the grapes and must, stopping the fermentation to obtain a wine with high alcohol content and residual sugar. The maceration, already in the presence of the spirit, continues for another 5-6 days always at a low temperature. After pressing, the wine begins an aging process in wooden vats for several years, improving the integration of the spirit with the wine and enhancing its bouquet. During the aging in wood, the wines that will make up the Favaios 10 Years blend are chosen, mixing older harvests with younger ones, making the wine richer, more intense, and complex.
