Winemaking Quinta Vale Dona Maria Vinha do Rio Tinto 2020: All grapes are harvested by hand, carefully selected on a sorting mat and trodden in lagares where they then ferment for 7 to 10 days at temperatures of 22º to 27ºC. Aging: New barrels of 225L French Allier oak (François Freres, Taransaud, and others), where malolactic fermentation and aging takes place for 21 months. The final selection of barrels and the composition of the batch generally takes place between May and June of the second year after the harvest.
