Sparkling wine produced with the free-run juice (without pressing), from 100% Alvarinho grapes. The bottle fermentation, the prolonged aging (24 months) always at controlled temperature, and the harmonization of the grape variety with the traditional Champenoise method (classic method), make Côto de Mamoelas a "greedy" sparkling wine with unique elegance, freshness, creaminess, and persistence. Ideal for all occasions where you want to impress! VINIFICATION The grapes, previously selected and exclusively transported in 20 kg boxes, are pressed whole to obtain a high-quality juice, which gives rise to the Alvarinho Vinho Verde Sparkling Wine. The juice is clarified at 12º C for 48 hours and fermented at controlled temperature for 12-15 days. This is followed by a 5-month aging period on fine lees. Subsequently, bottling, fermentation (classic method), and aging for 24 months take place, after which "remouage" and "degorgement" are performed.
