Vinification of the Conde D Ervideira Private Selection Red Wine 2019: From the selection of the best lots of grapes, vinified grape variety by variety. Aragonez ferments in “vinimatics”, while the other two varieties, Trincadeira and Alicante Bouschet, ferment in lagares equipped with mechanical treading robots. The process takes place at a controlled temperature of 25ºC. Aging for 12 months in new barrels, mainly French oak. The blend is then bottled, remaining in the cellar for 18 months.
