Vinification of the Caves São João 100 Years of History Brut Sparkling Wine: After a very delicate pressing of the grapes, harvested at the end of August, the must fermented for 15 days in stainless steel tanks at a controlled temperature. The production, following the classic method, began in March 2016 with the tirage using wild yeasts, with the secondary fermentation taking place in the cellar for 25 days at 14 ºC, followed by a bottle aging period on lees of 48 months, for the first disgorged batch in May 2020.
