Vinificação do Manoella Vinhas Velhas Tinto: A vindima realizou-se em perfeitas condições atmosféricas no dia 8 de Setembro. As uvas devidamente seleccionadas e desengaçadas foram pisadas a pé durante 12 horas em lagares de granito após as quais fermentaram em cuba ao longo de 8 dias. O estágio decorreu em barricas neutras de carvalho francês durante 16 meses.
