During winemaking, the skins macerate for 12 hours, followed by alcoholic fermentation at 16ºC, using only the purest free-run juice. The Bacalhoa Bical Bairrada Clássico White 2021 is produced exclusively with grapes from the Bical variety. We ferment 60% of the wine in new and 1-year-old French oak barrels, with battonage (stirring of the fine lees to enhance the wine's gustatory structure) carried out for 6 months. The wine aged for 12 months in the bottle.
