Vinificação do Vinho Quinta do Monte Xisto: As uvas foram vindimadas manualmente no início de Setembro e transportadas para a adega em caixas de 20kg. Foram vinificadas em lagares com pisa a pé. A fermentação desenvolveu-se ao longo de 6 dias no lagar com leveduras indígenas. Seguiu-se um estágio de 18 meses em pipas de 600 litros.
