Vinification: The vinification of the three grape varieties occurs separately, with the blend made later. The grapes are hand-harvested and the pressing of whole bunches is done in a pneumatic press. After 48 hours of decantation, the must ferments at 18ºC in 500L French oak barrels. Once fermentation is complete, the wine ages for 10 months in the barrels with weekly battonage for 2 months.
