Quinta dos Carvalhais is the wine brand specialized in producing the best and most flavorful wines of Dão, establishing itself as the leading reference in the region. Quinta dos Carvalhais White Especial is a wine without a vintage year that confirms the excellence of Dão in producing great whites and the aging potential that characterizes the wines of the region. The grapes of the varieties destined for this wine were received at the winery in small 20 kg boxes, being unloaded directly into the pneumatic press. The musts, properly protected from oxidation through the use of inert gases, underwent static decantation at low temperature for a period of 24 hours. They were then sent to stainless steel tanks with controlled temperature, where fermentation took place for about 20 days at controlled temperatures. In this wine, an attempt was made to recover old habits of Dão in the aging of white wines, where it was common to age them for long periods in old oak barrels, thus going through various environmental conditions throughout the year.
