Real Companhia Velha Brut Sparkling Wine is the result of a careful selection of Pinot Noir and Chardonnay originating essentially from Quinta de Cidrô in São João da Pesqueira, with part of the Pinot collected at Quinta do Casal da Granja on the Alijó plateau. The Cidrô terroir, due to its altitude and mild climate, allows for a longer cycle in the vine, thus allowing both Pinot Noir and Chardonnay to be harvested at the perfect time to be sparkling. This beautiful Quinta, although located at an altitude of 550m, has poor, schist soil, which results in lower production, which gives this Sparkling wine an excellent texture, volume and acidity. On the Alijó plateau, at Quinta do Casal da Granja, the richer soils and even cooler climate result in fresher and more aromatic wines. Through purposeful thinning, in order to preserve a high level of natural acidity in the grapes, the greenest bunches are collected and vinified in small stainless steel vats as bases for the final batches.
