Winemaking of Quinta Vale Dona Maria Reserva Port Wine: The grapes are foot-trodden before fermentation, with the incorporation of 15% of the total spirit to be added. This allows maceration of the grapes at lower temperatures and for a longer period before fermentation. When the must is ready for fortification, it is done all at once by adding the spirit to the must and skins in the lagar. A new treading ensures good homogenization and complete stoppage of fermentation. The must and spirit remain in the lagar for another two to four days, with a very light treading of 10 minutes twice a day. It is then transferred to barrels along with the presses. The wines age in very old barrels (over 100 years) of oak and chestnut, and in small stainless steel vats until the month before bottling.
