Tras una cuidadosa selección por su mejor estado, las uvas fueron cosechadas en cajas de 25 kg y enviadas al centro de producción de vinos, donde fueron totalmente despalilladas. La fermentación se llevó a cabo durante 9 días en los tradicionales tanques de piedra granítica de 7 toneladas con piso a pie y remontaje suave para la lixiviación de cubiertas y extracción de compuestos fenólicos y aromáticos. Al final de la fermentación alcohólica, el vino fue transferido a barricas de roble francés de 2º año, donde se realizó la fermentación maloláctica y se envejeció durante aproximadamente 18 meses.
