After the careful selection of grapes in the vineyard, the harvest was done manually into 20 kg boxes and then subjected to cooling in a cold chamber until 8-10ºC. Next, they are sorted on a selection conveyor and pressed at low pressure in a pneumatic press. The alcoholic fermentation takes place in a stainless steel tank for a period of 18 days with the temperature controlled at around 15ºC. After alcoholic fermentation, the base wine remains in aging in stainless steel, promoting the lifting of the fine lees until February 2014. The second alcoholic fermentation in the bottle began in June 2014, extending the aging in the bottle with the lees from the second fermentation until the disgorgement that precedes commercialization. The disgorgement took place in October 2023, giving the wine great complexity as a result of the long years of aging in the bottle.
