Porto Quinta das Carvalhas Vintage 2005Este Porto Vintage da Quinta das Carvalhas é produzido apartir de uma selecção de parcelas de Vinhas Velhas onde é elaborada uma vindima de cariz verdadeiramente cirurgico para colher à mão apenas as uvas que se encontram nos desejados níveis de maturação. Através da prova no local, são colhidas apenas as uvas perfeitamente maduras, repetindo-se a operação ao longo do periodo de vindima. Uma vez colhidas são transportadas para a adega em caixas de pequena dimensão, dando-se inicio ao ancestral processo de pisa a pé nos tradicionais lagares de granito, os quais, devido ao seu formato, permitem um perfeito contacto entre o mosto e as peliculas, perimitindo maior estração. É feita a interrupção da fermentação através de adição de aguardente vínica, seguido de umaestágio em balseiros de carvalho por um periodo de 2 anos.

Na prova, os sabores igualam o perfil aromático, com um perfil rico em fruta mas muito elegante e surpreendentemente jovial. Os seus taninos, embora que ainda presentes são doces e redondos, mas conferindo-lhe juntamente com a sua amplitude em fruta, uma excelente estrutura que promove assim ainda a possibilidade de largos anos de evolução em garrafa.
No nariz, surgem belíssimas e intensas notas de fruta madura, como alcaçuz e ameixa e amora preta que combinam com nuances balsâmicas e de pimenta branca.
