Vinification of the Carm Reserva Red Magnum: bunches that were not in perfect condition were removed, total destemming, gentle crushing and thermal shock, followed by a cold pre-fermentation maceration period in the lagar for about 12 to 24 hours, after which the masses were transferred to wide and low fermentation tanks, maceration for 8 days at 22ºC.
