Vinification of Manoella Vinhas Velhas Tinto: The harvest took place in perfect weather conditions on September 8th. The grapes, properly selected and destemmed, were foot-trodden for 12 hours in granite lagares, after which they fermented in a vat for 8 days. The aging occurred in neutral French oak barrels for 16 months.
