Nach sorgfältiger Auswahl ihres besten Zustands wurden die Trauben in 25-kg-Trauben geerntet und zum Weinproduktionszentrum geschickt, wo sie völlig entfesselt wurden. Die Fermentation erfolgte 9 Tage lang in traditionellen 7-Tonnen-Granitsteintanks mit Bodenbelag und glattem Zusammenbau, um Decken auszulaugen und phenolische und aromatische Verbindungen zu extrahieren. Am Ende der alkoholischen Gärung wurde der Wein in französische Eichenfässer des zweiten Jahres umgefüllt, wo die malolastische Gärung stattfand und er etwa 18 Monate lang reifte.
