Vinifizierung des Portweins Kopke Colheita 2014: Von Hand zum idealen Zeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und durch einen sorgfältigen Mazerationsprozess in Wein verwandelt, um ihre Farbe, Tannine und Aromen zu extrahieren, die durch ständiges Rühren während der Fermentation verstärkt werden. Diese erfolgt in temperaturkontrollierten Behältern (Lagares) bei Temperaturen zwischen 28-30°C, bis der geeignete Süßungsgrad (Baume) erreicht ist. An diesem Punkt wird Traubenbrand hinzugefügt, um den endgültigen verstärkten Wein zu kreieren. Ein Wein von hoher Qualität, der aus einer einzigen Ernte hergestellt wird. Ein Colheita-Wein reift in Eichenfässern über Zeiträume, die variieren können, aber niemals weniger als 7 Jahre betragen. Er wird dann abgefüllt und verkauft, je nach den Anforderungen des Marktes.
