Vinifikation des Portweins Kopke 40 Jahre: Von Hand zum optimalen Zeitpunkt geerntet, werden die Trauben entrappt, zerdrückt und nach einem Verfahren vinifiziert, das auf einer sorgfältigen Mazeration mit Extraktion von Farbe, Tanninen und Aromen aus den Schalen basiert, ergänzt durch ständige Überpumpungen während der Fermentation. Diese erfolgt in Lagares bei kontrollierter Temperatur zwischen 28-30ºC, bis der gewünschte Baumé-Grad erreicht ist. In dieser Phase wird der Weindestillat (Benefício) hinzugefügt, was zu einem verstärkten Wein führt. Ein Wein von hoher Qualität, der durch die Vermischung von Weinen aus verschiedenen Jahrgängen gewonnen wird, um eine Ergänzung der typischen organoleptischen Eigenschaften dieses Alters-Tawny-Stils zu erreichen. Er reift in Holz über variable Zeiträume, in denen das auf dem Etikett angegebene Alter dem ungefähren Durchschnittsalter der verschiedenen Weine im Blend entspricht und den Charakter des Weins in Bezug auf die durch die Reifung im Fass verliehenen Eigenschaften ausdrückt. Limitierte Holzkiste, solange der Vorrat reicht.
