Winemaking Quinta dos Frades Vinhas Velhas Red 2015: the vineyards for this wine are part of the best terroirs on the farm. Soil mobilization is done by the animal. The grapes are harvested manually, de-stemmed and trodden by foot in granite presses. Fermentation takes place between 6 and 10 days with gentle extraction and temperature control. Aging: 12 months in new French oak barrels, with a light toast. Minimum 12 months of aging in bottle.
