Vinificação do Vinho Branco Filipa Pato Flos Castanea:Fermentámos a casta Bical com contacto pelicular após o desengace completo das uvas. A flor de castanheiro foi adicionada como único conservante. Durante duas semanas, realizámos pisas manuais em lagar aberto, até ao final da fermentação. Posteriormente, os sólidos foram prensados numa prensa tradicional de cesto. O vinho envelheceu parcialmente em pipa (casco de carvalho de 500 litros) e parcialmente em ânforas durante um ano, até atingir estabilidade natural.“Flos Castanea” (Flor de Castanheiro em latim) foi inspirado pelo nosso bom amigo João Goucho, neto do pioneiro da biodinâmica em Portugal, Fernando Paiva, da Quinta da Palmirinha.

Amarelo-palha intenso com reflexos esverdeados.
Na boca, é cremoso, relativamente suave, com uma intrigante mineralidade, frescura e boa persistência. Sem dúvida, um vinho que surpreende o paladar!
Apresenta um toque distinto de flores (camomila, flor de tomilho), peras (típico da Bical) e um ligeiro caráter a frutos secos (avelãs, amêndoas, pinhões). Com algum tempo no copo, revela ainda mais notas de tomilho e mel. É um vinho que continuará a desenvolver-se com o tempo em garrafa.
