Ageing of Regateiro Baga Bruto Sparkling Wine: 12 months of ageing after the second fermentation and 2 months in the cellar after disgorgement before being released onto the market. Regateiro Bruto Sparkling Wine. Winemaking: Base wine made from the Baga grape variety, with destemming, crushing and pressing, followed by settling and first fermentation in stainless steel tanks at temperatures below 16ºC. The second fermentation took place using the traditional method, also called bottle fermentation. 36 months of ageing after the second fermentation and 2 months in the cellar after disgorgement before being released onto the market. “Regateiro”, a family name with more than 350 years of involvement in the wines of the Bairrada Region, had a single descendant continue the project in 1990: Casimiro Gomes. He specialized in Viticulture and Oenology in the 1980s and developed winemaking projects in partnership with other professionals in Dão, Bairrada, Douro, Alentejo and also Brazil. He launched the Family wines as the culmination of a combination of knowledge and experience.
