The grapes are harvested manually early in the morning, into small boxes, to preserve their freshness, and are then cooled in a cold room before being vinified. Upon arrival at the winery, the grapes are carefully selected on the sorting table, then de-stemmed, gently crushed and transferred to 3000 liter oval cement vats, where alcoholic fermentation takes place at a controlled temperature. This is followed by post-fermentation maceration for seven months.
