TITAN of Távora-Varosa Daemon “Sescenti Sexaginta Sex” (666) is a white wine from an ancient vineyard, over 140 years old, located in the municipality of Sernancelhe, at an altitude of 850 meters. This vineyard, covering an area of 0.80 hectares, grows in granitic and quartz soil, with the Cerceal variety predominating among other planted varieties. Winemaking: The winemaking was done with great simplicity and minimal intervention: fresh grapes at their ideal ripeness, hand-picked into 20 kg boxes, were transported to the winery where they underwent a careful manual selection, destemming, and gentle crushing. Without pressing, it went directly into new French oak barrels, where it underwent alcoholic fermentation and malolactic fermentation and continued aging for another 24 months, with regular stirring of the fine lees and controlled temperature and humidity.
