Vinification of Quinta dos Castelares Reserva Tinto: Manual harvest. Total destemming followed by crushing. The grapes are fermented by variety and vineyard parcel, with the aim of making the selection that allows for a better final result. Fermentation in small capacity stainless steel tanks, at a temperature of 24ºC. Controlled and gentle maceration, with the aim of obtaining concentrated, aromatic, and elegant wines.
