Vinification of Menin Dona Beatriz Tinto: Transport of the grapes in 20 kg boxes, preservation of the same in a cold chamber to maintain the aromatic freshness at the time of pre-fermentation maceration. Sorting on a conveyor with whole bunches, followed by destemming and selection berry-by-berry on a second selection conveyor. The berries are only crushed at the moment of entry into the vat, with the entire process functioning by gravity. Fermentation in INOX vat and after malolactic fermentation, it goes to new French oak barrels of 225L capacity selected with care. The aging in barrel lasted for 20 months. After bottling, the wine is in aging for about 18 months. Predominance of Tinta Amarela, Touriga Franca, Tinta da Barca among the 54 grape varieties.
