Vinification of Ervideira Late Harvest Wine 2018 (Case): From a plot of Antão Vaz, the best grapes were selected, which remained on the vine until November. This allowed the development of rot in these berries, increasing the concentration of sugars. The fermentation is then carried out at low temperatures around 12ºC, for about 30 days.
