Melgaço, the northernmost region of Portugal, is protected by a range of mountains that allow a perfect balance between rainfall, temperature, and the number of sunshine hours necessary for the best ripening of the Alvarinho grape variety. This climatic characteristic during ripening is often associated with the microclimate of Monção and Melgaço, which alternates warm days with cold nights, allowing the maintenance of fresh and fruity aromas with a present but moderate acidity, very much in the style we define for Soalheiro. Vinification of Vinho Verde Alvarinho Soalheiro: The grapes, exclusively of the Alvarinho variety, are handpicked in small capacity boxes and transported to the winery in a short time. After pressing, the obtained must settles for 48 hours, followed by fermentation at controlled temperature, using pre-selected yeasts for this purpose. Bottling takes place after the wine stabilizes, followed by aging in the bottle. The vinification of Alvarinho Soalheiro is aimed at obtaining a wine that concentrates the quality of the grapes and allows good development after bottling.
