Akashi whisky is the only whisky in the world produced by a Toji (master brewer in the art of making sake), implementing sake production methodologies in the whisky-making process. The pot still used is smaller than those used by Scottish and other Japanese distilleries, which in turn reduces fusel alcohol levels. As a result, Akashi whisky does not require such a long aging process, while its main malt (barrel strength) is smooth and delicate.
