Gouveio é uma das castas brancas mais conhecidas no Douro. Apesar de ser uma variedade de grande sensibilidade e pouco produtiva, é uma casta de grande nobreza a qual encontrou no terroir fresco da Quinta de Cidrô as condições perfeitas para o seu bom amadurecimento. Uma casta que prima pela sua excelente textura de boca, riquíssima mineralidade e elevada acidez. Dessa forma, abordamos este Gouveio vindimando cedo, de forma a preservar todo o seu caracter num estilo fresco e equilibrado. Vinificação e estágio:As uvas são colhidas à mão e transportadas até a adega em caixas de 20kg. Após passarem por uma processo de escolha manual, os cachos são desengaçados, e as uvas são prensadas numa prensa pneumática. Após uma decantação de 24h, segue-se a fermentação alcoólica do mosto em cubas de inox a 14-16ºC. 80%s do Gouveio estagiou em barricas (20% madeira nova) e um tonel, ambos de carvalho francês por um periodo de 8 meses em contacto com borras finas sobre o método de batonage, enquanto 20% estagia em inox até à execução do lote e engarrafmento.
