La vinification des différentes cépages se fait séparément, le lot étant réalisé par la suite. Les raisins sont récoltés mécaniquement pendant la nuit et, après 3 jours de macération pré-fermentaire, la fermentation alcoolique a lieu dans des cuves en inox à 24ºC. Les masses sont pressées dans un pressoir hydraulique et la fermentation malo-lactique se fait en fûts de chêne français, où elle séjourne 10 mois.
