Vinification : Provenant de petits parcelles, les raisins préalablement sélectionnés sont récoltés à la main dans des caisses en septembre, très tôt, afin d'arriver à la cave encore le matin. Après 3 jours de macération pré-fermentative, la fermentation alcoolique se déroule dans des cuves en inox à 26ºC. Les masses sont pressées dans un pressoir hydraulique et la fermentation malo-lactique se déroule en fûts (neufs et de 2ème année) de chêne français, où elle séjourne 14 mois.
