Vinification of Quinta do Soque Superior Red Wine: the grapes, coming from Quinta do Soque, were transported in food-grade plastic boxes and subjected to a rigorous sorting at the entrance of the winery. After a total destemming and a slight crushing, the must was transferred by gravity to stainless steel fermentation tanks with controlled temperature.
