Altano Reserva TintoVinificação: As uvas são vindimadas manualmente para caixas de 20 Kg. Na adega é feita a escolha de cachos, seguindo-se o desengace suave e uma segunda escolha, bago a bago. Os bagos inteiros são então transportados por gravidade para cubas de fermentação de aço-inox e suavemente esmagados à entrada da cuba. As fermentações são seguidas individualmente, sendo as temperaturas e os movimentos de maceração por remontagem e délestage ajustados, de modo a que cada vinho conserve todo o potencial das uvas que lhe dão origem. Terminada a fermentação alcoólica, segue-se uma maceração pós-fermentativa, para extração de taninos das grainhas, que complementam os taninos extraídos das películas, desenvolvendo uma “boca” mais completa, por reforço da estrutura e untuosidade.
