The harvest is done manually, with manual selection of the bunches. The berries are de-stemmed and gently crushed. Traditional granite mills with foot treading were used as fermentation reservoirs. Subsequently, the wine aged in French oak barrels for at least 18 months. All wines are sealed with natural cork. Not being filtered or stabilized by cold, these wines can give rise to a precipitate with age.
Deep ruby color
The mouth is in agreement in everything: silky tannins wander through the rich presence of fruit and the spicy touches of the barrel, which rejoice in impeccable acidity.
On the nose, the notes of forest fruit dominate, with splashes of bergamot and soft menthol that give it an intoxicating freshness.
