Winemaking of Bairrada Wine Filipa Pato Nossa Red: From the origin, from the vineyard to the bottle, the philosophy is to create a wine that respects the expression of the baga grape without makeup, without artifices. Maintaining ancestral winemaking techniques with minimal intervention. The Nossa red originates from old vineyards in various areas mentioned on the map. The viticulture work is manual, respecting traditional techniques of the region, maintaining natural vegetation without the use of herbicides. With a small percentage of whole grapes (about 10%), the baga is vinified in a wooden vat inspired by Roman times. It rests for 18 months in 500-liter fine-grain French oak barrels, 80% used and 20% new. 2500 bottles and 110 magnums were bottled in 2011. All are manually sealed with natural wax to ensure good aging in the cellar.
