Description
Creamy notes of fennel and anise on the notes; the anise seems a little ahead with the juniper being a clean second. Juniper is expertly blended with fennel on the nose creating a hybrid fennel seed with juniper spice on the edges. Really lovely. On the palate, juniper at the beginning with an evergreen needle/pine note. The mid-palate is packed with notes like Jingle Cookie, with anise and fennel making a bright, sweet spice note. The finish adds coriander and a subtle creamy, vanilla hay note that reminds me of the creamy notes of vodka on its own. The finish is bright and clean, like chewing on a fennel seed. Just like you might make from that bowl on the counter near the cash register in an Indian restaurant. But I digress. I really like the fennel in here, it's as beautiful as I've ever tasted expressed in any gin.
