When the harvest in Dão ends, only the grapes that will give rise to this Late Harvest are left behind. It's time for the autumn sun, the first rains and humidity, the leaves that, in Santar, take on such contrasting colors and patterns. Only in the best years are we able to produce this wine, which we call Outono de Santar, as it always brings to mind the unique magic of this time of year in the emblematic Vila de Santar.Vinification of the Wine Outono de Santar Late Harvest 2013: Total stemming, pneumatic pressing smooth with use of 20% of grape juice, natural static clarification, alcoholic fermentation in “second use” barrels at 20°C. Aging: 6 months of battonage with 12 months in second use barrels.
Complex with distinct freshness, unctuous and well balanced. Long and persistent finish
Botrized, with nuances of butter, dried fruits, dried apricot and floral nuances
