Vinification of Herdade das Servas Reserva Red 2017: The grapes are selected on the sorting table, destemmed, followed by pre-fermentation maceration. Fermentation takes place in a lagar and stainless steel tank with temperature control. Aging: After the malolactic fermentation is completed, the wine aged for 12 months in 1st and 2nd year French and American oak barrels. After bottling, it rested in the bottle for 10 months in our cellar. To preserve all its qualities, this wine was not stabilized, and may naturally create sediment.
