Von Hand gelesene Trauben und nach einer zweiten Auswahl der Trauben, die am Sortiertisch bei der Ankunft im Weingut durchgeführt wurde, durchliefen die Trauben den Prozess der vollständigen Entrappung und anschließendes Barfußstampfen in einem Marmortrog für 48 Stunden, um einen präfermentativen Hautkontakt zu ermöglichen. Die Gärungen erfolgten in zehn neuen französischen Eichen-Spindelfässern mit einem Fassungsvermögen von 500L, gefolgt von zwei Wochen Reifung auf der Maische. Der Servas de Bacchus Rotwein 2016 reifte zwei Jahre in neuen französischen Eichenfässern mit 225L Fassungsvermögen. Er wurde im Mai 2019 abgefüllt.
