Após uma cuidadosa seleção pelo seu melhor estado, as uvas foram colhidas para baús de 25 kg e enviadas para o centro de produção de vinhos, onde foram totalmente desacorrestas. A fermentação ocorreu durante 9 dias nos tradicionais tanques de pedra granítica de 7 toneladas com piso nos pés e remontagem lisa para lixiviação de cobertores e extração de compostos fenólicos e aromáticos. Ao final da fermentação alcoólica, o vinho foi transferido para barris de carvalho francês de 2º ano, onde ocorreu fermentação malolástica e envelhecida por cerca de 18 meses.
