Im Mouchão keltern wir ALLE Rotweine in offenen Steintanks. Ganze Trauben, mit Stielen, werden in den Maischeprozess einbezogen, weshalb der Erntezeitpunkt besonders kritisch ist, da ein empfindliches Gleichgewicht zwischen Zucker, Säuren, der gesamten phenolischen Reife (Farbe, Tannine usw.) sowie der Verholzung der Stiele gefunden werden muss. Die ganzen, von Hand geernteten Trauben werden in 20-kg-Kisten zur Kellerei transportiert, wo sie in Lagares zu Fuß gestampft und etwa 4 bis 6 Tage fermentiert werden. Im Jahr 2016 waren die Tannine, die Farbe und die Reife der Stiele nahezu perfekt. Dieser junge Wein wird im Herbst seine malolaktische Gärung in großen Holzfässern (5.000 L) durchlaufen. Mitte des Winters wird er filtriert und verbleibt dann etwa 4 Jahre lang ohne jegliche Intervention in den berühmten Mahagoni- und Macacaúba-Fässern. Nach der Abfüllung reift er weitere 3 Jahre in unseren Kellern vor seiner Freigabe. Dekantieren oder 12 bis 24 Stunden vor dem Servieren öffnen. Sein bestes Potenzial bis 2036.
