Vinifizierung des Weins Quinta do Monte Xisto Die Trauben wurden Anfang September von Hand gelesen und in 20-kg-Kisten zur Kellerei transportiert. Sie wurden in Lagares mit Fußstampfen vinifiziert. Die Gärung erfolgte über 6 Tage im Lagar mit einheimischen Hefen. Es folgte eine Reifung von 18 Monaten in 600-Liter-Fässern.
