Vinificação do Quinta do Cardo Grande Reserva Branco: Após prensagem das uvas, o mosto fermentou em barricas de 500 litros, novas e usadas, de carvalho francês. Seguiu-se um ano de estágio sobre as borras totais de fermentaçãoA Quinta do Cardo é a mais histórica propriedade vitivinícola da Beira Interior, situada entre a paisagem protegida da Reserva Internacional do Douro e a aldeia histórica de Castelo Rodrigo, a uma altitude que ronda os 750 metros. Os seus 180 hectares de área albergam floresta, sobreiros e cerca de 80 hectares de vinha, desde 2009 certificada no modo de produção biológico. A quinta é um ecossistema cuidadosamente preservado que promove a biodiversidade e o desenvolvimento da fauna e flora autóctones e contribui para a criação de vinhos genuínos, com forte sentido de terroir.
