Der Ursprung des Aguardente Bagaceira Adamus reicht weit zurück in die Geschichte Portugals. Das derzeitige und unangemessene Bild, weniger edel und abgewertet als ein rustikales Getränk voller Geschichte, musste wiederhergestellt werden. Nach 4 Generationen der Herstellung traditioneller Bagaceira-Spirituosen war es an der Zeit, auch eine Bagaceira zu produzieren, die das Beste einer traditionellen Spirituose mit moderneren Details verbindet, ohne die Seele einer reinen lusitanischen Bagaceira, speziell aus der Bairrada, zu verlieren. Der beste Trester aus der Weinbereitung der besten Baga-Weine der Bairrada wurde ausgewählt, wobei der gesamte Prozess der Weinbereitung und Reifung sorgfältig begleitet wurde. Es wurden mehrere langsame und detaillierte Destillationen in Kupfergefäßen durch direkte Dampfinjektion durchgeführt, und die besten Destillate wurden sowohl sensorisch als auch analytisch im Labor ausgewählt.
