A casta Encruzado é exclusiva da região do Dão, é bastante equilibrada, aromática e confere aos vinhos uma grande longevidade. As plantas crescem em encostas situadas entre os 350 e os 400 metros de altitude. A vinha é conduzida dentro de um programa de protecção integrada, sendo interdita a aplicação de herbicidas. O controlo das infestantes é efectuado com mobilização do solo. A vindima é manual, quando estas atingem o ponto óptimo de maturação, situando-se na 2ª quinzena de Setembro.Este vinho de primeira produção foi vinificado em inox a 13ºC, tendo dois terços do mesmo terminado a fermentação em barricas novas de carvalho francês, onde estagiou durante 12 meses.Produção: 1.300 garrafas
